Hoff's Tofu Ramen Soup

Hoff's Tofu Ramen Soup

Serves 2
meat-free, dairy-free, egg-free, oil-free, soy-free, gluten-free


Ingredients:
  • 2 bundles Ramen Noodles
  • 4 cups Vegetable Broth
  • 7 oz block firm Tofu (cut into small squares) 
  • 1 cup Cabbage (slaw mix)
  • 1/2 cup organic Edamame
  • 1/2 cup organic Corn
  • 1/2 sheet of Roasted Seaweed (torn/cut into pieces) 
  • 1-2 tbsp Bragg's Liquid Amino Acid (or soy sauce) to taste
  • 1 tbsp Almond Butter
  • 1 tbsp Miso
  • 1 tsp Umami Seasoning
  • 1 tsp minced Ginger
  • 1 tsp minced Garlic
  • Juice from 1 Lime

Directions:
  1. Combine all ingredients (minus Noodles) in a pot and bring to a boil
  2. Add Noodles and cook according to package time
  3. Finish with Lime Juice
  4. Enjoy!
