Hoff's Chickpea Salad

Hoff's Chickpea Salad
Yields: 6-8 sandwiches
meat-free, dairy-free, egg-free

Ingredients:
  • 1 15 oz. can Chickpeas (rinsed & drained)
  • 1 Pickle (chopped)
  • 1/3 cup chopped Sweet Onion
  • 3 tbsp. Vegenaise (vegan mayo)
  • 1 tbsp. Lemon Juice
  • 1 tbsp. Mustard
  • 1 tsp. Braggs
  • 1 tsp. Kelp

Directions:
  1. Mash Chickpeas using a potato masher until all Chickpeas are smashed
  2. Combine all ingredients in a bowl
  3. Allow to chill in the fridge before spreading onto toasted Whole Wheat Bread
