Hoff's Tortilla Soup (IP)


Hoff's Tortilla Soup (IP)
Yields: 6-8 servings
meat-free, dairy-free, egg-free, oil-free, gluten-free, soy-free*

Ingredients:
  • 4 Corn Tortillas
  • 4 cups Veggie Broth
  • 2 cups Water
  • 20 oz. can Jake fruit (rinsed, drained & shredded)
  • 2 - 15 oz. cans Fire Roasted Diced Tomatoes
  • 15 oz. can Black Beans of choice (rinsed & drained)
  • 15 oz. can Kidney Beans of choice (rinsed & drained)
  • 1 cup frozen Organic Corn
  • 1 Onion (chopped)
  • 1 tbsp. minced Garlic
  • 2 tsp. Vegan Chicken Broth Seasoning
  • 1 tsp. Cumin 
  • 1 tsp. Paprika 
  • 1 tsp. Garlic Powder
  • 1 tsp. Onion Powder
  • Season with Sea Salt/Braggs*

Directions:
  1. Turn on sauté feature and cook Onions until translucent
  2. Add minced Garlic and stir for 30 seconds
  3. Turn off sauté feature
  4. Stir remaining ingredients, except Tortillas
  5. Close & lock lid
  6. Set Pressure Valve to Sealing
  7. Select Manual setting on High Pressure & cook for 5 minutes
  8. Meanwhile, cut Tortillas into stripes
  9. Layout on baking sheet & air fry at 400 degrees for about 5 minutes or until crispy
  10. Quick release pressure
  11. Using an immersion blender, blend soup for a few seconds, to make creamy w/some ingredients left whole
  12. When serving, place a few Tortilla Chips on top of the soup

Hoff’s Mexican Pizza


Hoff's Mexican Pizza
Yields: 2 Pizzas
meat-free, dairy-free, egg-free, gluten-free, soy-free 

Ingredients:
  • 2 Cauliflower Crusts
  • 15 oz. can fat-free Refried Beans
  • 2 oz. can of sliced Black Olives (rinsed & drained)
  • 1 carton sliced Mushrooms
  • 1/2 bag frozen Onions & Peppers
  • 1/2 cup Salsa
  • 1 Avocado (mashed)

Directions:
  1. Preheat oven according to crust directions
  2. Spread out Mushrooms, Onions & Red Pepper on silicon-lined baking sheet & air-fry at 400 degrees for about 8 minutes (optional, but cooking ahead is advised)
  3. Spread Beans onto each crust, apply a layer of Avocado and a layer of Salsa
  4. Top with Mushrooms, Onions, Peppers & Black Olives
  5. Bake according to crust directions
  6. Slice & serve

Hoff's Santa Fe Wild Rice (IP)



Hoff's Santa Fe Wild Rice (IP)
Yields: About 4-5 cups
meat-free, dairy-free, egg-free, oil-free, gluten-free, soy-free 

Ingredients:
  • 16 oz. jar Salsa
  • 2.5 cups Water
  • 1 cup Brown Jasmine Rice
  • 1 cup Wild Rice
  • 15 oz. can Black Beans (w/liquid)
  • 1 cup frozen Organic Corn
  • 1 small-medium Sweet Onion (chopped)
  • 2 tbsp. Tomato Paste
  • 2.5 oz. can sliced Black Olives (rinsed & drained) (optional)

Directions:
  1. Turn on sauté feature
  2. Cook Onions until translucent
  3. Turn off sauté feature
  4. Dump rest of ingredients in IP
  5. Close & lock lid
  6. Set Pressure Valve to Sealing
  7. Select Manual setting on High Pressure & cook for 22 minutes
  8. Natural pressure release
  9. Stir & enjoy!

Hoff Thoughts: While the Black Olives add a nice flavor, they do add fat, so omit if trying to lose weight.

Hoff's Basic Veggie Soup (IP)



Hoff's Basic Veggie Soup (IP) 
Makes: About 10 cups
meat-free, dairy-free, egg-freeoil-free, soy-free, gluten-free 

Ingredients:

Directions:
  1. Turn sauté feature on & sweat Onions for a few minutes
  2. Add Garlic & stir for 30 seconds
  3. Turn off sauté feature
  4. Add remaining ingredients (except Veggie Broth Base) into the Instant Pot
  5. Close & lock lid
  6. Make sure pressure release valve is closed
  7. Cook Manually on High Pressure for 10 minutes
  8. Quick Release
  9. Stir in Veggie Broth Base
  10. Serve with a nice crusty bread!
