Hoff's Chickpea Burgers

Hoff's Chickpea Burgers
Yields: 8 burgers
meat-free, dairy-free, egg-free, oil-free, soy-free, gluten-free

Ingredients:

  • 2 15 oz. cans Chickpeas (do not drain)
  • 1 cup of Rolled Oats 
  • 1/2 cup chopped Onion
  • 1/2 cup Nutritional Yeast
  • 1 tbsp. Mustard
  • 1 tbsp. dried minced Onion
  • 1 tsp. Smoked Paprika
  • 1 tsp. Garlic Powder
  • 1 tsp. Onion Powder
  • 1 tsp. Sea Salt

Directions:
  1. Place all ingredients (Chickpeas first) in a high speed blender, blend until smooth
  2. Form into patties
  3. Allow to set-up in fridge for 20 minutes, uncovered before cooking or freeze
  4. Grill or broil until golden brown, about 10 minutes each side

Hoff Thoughts: I prefer to form my burgers using a silicon (BPA-free) burger press mat and freezing - much easier to work with. Two scoops of mix yields the perfect burger.

Hoff's Quinoa Salad (Instant Pot)

Hoff's Quinoa Salad (Instant Pot)
Yields: 4-5 Servings
meat-free, dairy-free, egg-free, oil-free, soy-free, gluten-free

Ingredients:
  • 3 cups Water 
  • 2 cups Jasmine Rice
  • 1 cup Quinoa
  • 1/2 Red Onion (chopped)
  • 1 15 oz. can Chickpeas (rinsed & drained)
  • 1 15 oz. can organic Corn (rinsed & drained) 
  • 1 15 oz. can Mandarin Oranges in light syrup
  • 1/3 cup Braggs
  • Juice from 1 Lime
Directions:
  1. Mix Water, Rice & Quinoa together in IP
  2. Lock lid in place and make sure pressure release valve is closed
  3. Press "Manual" button & reduce time to 5 minutes
  4. When done, use manual release method for 10 minutes, then quick release
  5. Stir in Red Onion, Chickpeas, Corn, Mandarin Oranges with Juice, Braggs & Lime Juice
  6. Allow to chill & marinate in fridge before serving

Quick GF Vegan English Muffins

Recipe modified from The Big Man's World

Quick GF Vegan English Muffins
Yields: 2 Muffins
dairy-free, egg-free, oil-free, soy-free, gluten-free

Ingredients:
  • 2/3 cup Rolled Oats
  • 1 tbsp. Chia Seeds
  • 1 tbsp. Sugar
  • 1 tsp. Baking Powder
  • Pinch Sea Salt
  • 6 tbsp. Applesauce
  • 2 tbsp. Water

Directions:
  1. Using a high speed blender, blend Oats into a fine powder
  2. Add remaining ingredients and blend on low to combine
  3. Use a small spatula to mix in any dry mix stuck in the corners
  4. Divide batter into two mugs & tap down to flatten
  5. Microwave each mug on High for 2 minutes
  6. Cool, remove Muffin, slice in half & toast for optimum enjoyment 

Hoff Thoughts: You can get 6 tbsp. of Applesauce out of one little snack pack cup.  Not exactly an English Muffin, but it's a tasty little breakfast bread.  Use this trick to easily clean your blender.
