Rice Pudding (Instant Pot)

Rice Pudding (Instant Pot)
Yields: 4 servings
dairy-free, egg-free, oil-free, gluten-free, soy-free

Ingredients:
  • 1 1/2 cups Water
  • 1 1/2 cups unsweetened Vanilla Plant Milk
  • 1 cup Arborio Rice
  • 1/4 cup Raisins
  • 1/4 cup Raw Sugar
  • 1 tsp. Cinnamon
  • 1 tsp. Vanilla Extract
  • 1/2 tsp. Sea Salt


Directions:
  1. Add all ingredients to the IP and stir to combine
  2. Close & lock lid
  3. Set Pressure Valve to Sealing
  4. Select Rice setting
  5. Natural Release steam for 5 minutes, then Quick Release the rest
  6. Dig in!

    1. I have brown jasmine rice, and the lightly sweet almond milk. Close to everything, but not quite as listed. Do you think it will still work?

    2. Nope, you can substitute any sweetener you like.

    3. Sweetened Almond Milk is fine, you may want to reduce the sugar a bit. Since you're using brown jasmine rice, I would increase the cooking time to 22 minutes.

  4. If I want to double the recipe, is it as simple as doubling the liquids?
    Made this for our Grinch dinner (who-pudding) and it was a hit! Used half brown, half white rice & coconut milk.
    Would like to make again for Christmas for more people.

  5. Made this as who-pudding for our Grinch dinner using half brown half white rice & coconut milk.... YUM-O! If I want to double the recipe, is it as simple as doubling the liquids? Wanna make it for our Christmas Eve dessert, Thanks!

  6. I love it - Who Pudding! I've never tried doubling it, but sounds logical that simply doubling the ingredients will get you the results you're after. But, I would natural release all the way instead of just for 10 minutes - not sure how long that takes, a few minutes more.
